OLIVE OIL FLOWER.
In this area, the olive picking is just finished. In the last
production of this season, I thought to obtain olive oil flower.
This name is
used in Spain with an unfiltered olive oil, presented in the most natural
state, and with reputation of being the purest.
It's obtained
picking manually the flowed oil, after kneading the crushed olives. So, this pure olive oil is produced
without centrifuging or pressing. After kneading you have to let the
dough rest to get the oil go up. Using cutting-edge
19th century technology, free oil is taked with a spoon.
Were processed
17 kilos of olives, obtaining 1 liter of olive oil flower, and another 2 liters
after pressing.The resulting slightly turbid liquid is the purest and
finest-flavoured olive oil that you can taste. Is what some olive oil
lovers in Spain call “the best olive oil possible”.
This oil is
recommended to consume raw, on toast bread or garnishing salads. It's advised
to be consumed as soon as possible to enjoy all their properties.
FLOR DE ACEITE
En la última elaboración de aceite de esta temporada, pensé en
obtener flor de aceite. Esta denominación se aplica a un aceite sin filtrar,
que se presenta en su estado más natural, y con la fama de ser el más puro.
Se consigue recogiendo manualmente aquel que se desprende por si
solo durante el amasado de las olivas trituradas, antes de aplicar los procesos
de centrifugación o de presión. Hay que
dejar reposar la masa para que el aceite se venga arriba.
Procesé 17 kilos de aceitunas, consiguiendo 1 litro de flor de
aceite, y luego prensando otros 2 litros.
Este aceite está recomendado para consumir en crudo, sobre unas
tostadas o aderezando una escalibada o ensaladas. Aconsejan que se consuma lo antes posible una vez
envasado para disfrutar de todas sus propiedades.
